Mango Shrimp

"This recipe is based on one by Ken Hom. We like it for it's refreshing taste. Also very easy to put together and quick to cook. Don't leave out the sesame oil, I think it is integral to the dish. Preparation time includes refrigerator resting time for shrimp."

  • 1 lb raw shrimp, cleaned, peeled, and deveined
  • 1 egg white
  • 2 teaspoons cornstarch
  • 12 teaspoon salt, plus
  • 12 teaspoon salt
  • 1 teaspoon sesame oil, plus
  • 2 teaspoons sesame oil
  • 12 teaspoon white pepper
  • 1 lb mango, peeled and cubed
  • 2 tablespoons peanut oil, plus
  • 1 12 tablespoons peanut oil
  • 1 12 tablespoons fresh ginger, peeled and chopped fine
  • 1 12 tablespoons garlic, chopped fine
  • 1 tablespoon rice wine or 1 tablespoon dry sherry
  • chopped scallion, for garnishing

  • In a bowl large enough to hold the shrimp, combine the egg white, cornstarch, 1/2 tsp salt, 1 tsp sesame oil, and white pepper.
  • Pat the shrimps dry, and mix them well with this marinade, making sure all are well coated.
  • Leave in the refrigerator for 20 minutes.
  • Heat a wok or large frying pan until very hot.
  • Add 2 TBS peanut oil.
  • When the oil is very hot, remove the wok from the heat and add the prawns.
  • Stir vigorously to prevent them sticking, return to heat and cook until they turn white, about 2 minutes depending upon the size of your shrimp.
  • Remove the shrimp, and discard the oil.
  • Wipe wok with paper toweling, removing all residues.
  • Return the wok to the heat, again heating until very hot.
  • Add 1 1/2 TBS peanut oil, and when very hot, add the ginger and garlic.
  • Stir fry for 10 seconds.
  • Return the shrimp to the wok and add the rice wine or sherry, and 1/2 tsp salt.
  • Stir-fry for one minute.
  • Add the mango cubes and stir gently for 1 minute to warm them.
  • Stir in 2 tsp sesame oil.
  • Serve with rice, garnished with chopped scallions.

We had this with broccoli (lightly steamed then sautéed with peanut oil and garlic right before serving), sprinkled with toasted sesame seeds (a very nice and tasty touche finale!). I followed the recipe exactly. Thanks for a keeper!

  3. Great recipe! New family favorite. I served it with Jasmine rice and spring rolls as a main course. It was quick and easy to prepare , although I marinated the shrimp longer.
     
  4. I adored this. Substitute for the white pepper if you're not a real fan because it dominates. I served this with stir fried broccoli and cauliflower and I wouldn't change a thing.
     
  5. Very tasty and very filling. Mangoes arn't in season here at the moment so I used tin mangoes which worked fine. Love the sesame through the dish. I served with rice. Thanks for posting.

I'm absolutely in love with the Bay of Naples and Sorrento coast areas of Italy, which my husband and I recently re-visited on a trip that included Rome, Puglia, Umbria and Marche. I'm still looking forward to Ireland, Spain, Portugal, the Czech Republic . . . the list is too long ! One of the bonuses of travel is getting to taste the local cuisine, and afterward trying to figure out how to duplicate it at home. I think cooking is one of the nicest things a person can do for someone they love (including themself!) I had to submit a picture with me and my cat, Sophie, as she insists on sitting in my lap when I'm sitting at the computer. If you are wondering what all that stuff hanging on the wall behind us in the photo is, it is just a small part of my husband's military medal collection. He was appalled by my posting this picture-- Our study is the messiest room in our house (thank god!)
