Maple Bacon Cookie Dough Truffles

ingredients
- 1⁄2 cup butter, softened to room temperature
- 3⁄4 cup packed brown sugar
- 1 (14 ounce) can condensed milk
- 1 tablespoon maple syrup
- 2 cups flour
- 1⁄2 teaspoon salt
- 1⁄2 cup candied bacon, chopped
- 1 lb dark dipping chocolate

- Prepare a baking sheet by lining it with parchment or wax paper.
- Using a large standing mixer, cream the butter and the sugar together until light and fluffy.
- Add the condensed milk and maple syrup and beat until well-mixed, then add the flour and salt and beat on low until combined. Stir in bacon.
- Using a small scoop or a teaspoon, scoop up small round balls of the dough and place them on the prepared baking sheet. Refrigerate for one hour. Remove from fridge and roll into balls. Place back in fridge for another hour.
- Melt chocolate in double boiler, in the microwave or, as I prefer, in a Crock Pot on low. Dip balls one at a time and coat evenly. [I tried dumping a bunch in the Crock Pot at once but they get soft fast. Alternatively, you could put the balls in the freezer for a few minutes before dipping first so they get good and cold.] Remove them with a fork and tap against the side of the pot to remove any excess chocolate. Place back on baking sheet and top with a piece of candied bacon, if desired.
- Put truffles back in fridge until firm. Store in fridge. Enjoy!

These were amazing! The only thing I would change is that I would add more bacon. Probably double the amount, you really can't taste the bacon otherwise. I used semi-sweet baking chocolate melted in a double boiler ( a medium saucepan with water and a large glass bowl on top) to melt the chocolate. It came out with a nice crisp shell. VERY rich. I sent most of them home with my kids,

Aside from being slightly labour intensive, these little balls of heaven are well worth the effort. I am able to make 65 truffles from the recipe as posted. I use a cookie scoop to ensure the balls are all even in shape and size. I suggest using a candy dipping fork when coating the balls with chocolate. It makes for less mess and a more professional look to the treats. Enjoy every bite.

I have not made these yet, but they look amazing and I can't wait to! Wanted to mention toasting the flour though, since they are eaten unbaked or raw or whatever. This will ensure that any little germies (E.coli) in the raw flour are dead. You just spread the flour on a parchment covered baking sheet in a 350°F oven for 5-10 min then cool completely and add to your recipe. This is great for making any raw cookie doughs.
