  • Cut each squash crosswise in half.
  • Scoop out seeds and strings.
  • Place squash halves (cavity side up) in large baking pan.
  • Put 1/4 of remaining ingredients into each cavity.
  • Bake in preheated 350 degree F oven for 35-40 minutes till squash is tender.

  2. This is a great recipe. I loved the pecans in this. I make squash similar to this all the time but can't remember putting the syrup and the brown sugar together before. Anyway, it is delicious and I recommend it to anyone. Thanks for posting!

  4. I took a bite of this still in the kitchen and said''wow, it tastes just like pecan pie!' and it does. A dessert veggie! Lovely,but very sweet. We had it with grilled duck breast. I too had to microwave for about two minutes to get it really done, but it wasn't a problem.
     
  5. DH and I both enjoyed this. Instead of the brown sugar I used a sugar substitute and you couldn't tell. Also, my squash was not tender at the end of cooking so I finished it off in the microwave for a few minutes. Something I am sure to do again.

I live near Rochester NY with my husband and our 18-year-old cat, Fluffy. It's actually Fluffy's house, but he allows us to live here as long as we pamper him and feed him generously. Our daughter, Kree, whom some of you know from Zaar, is also living with us again while she begins a new business venture in real estate. She's the one who got me hooked on Zaar and taught me to try new recipes rather than stay in the cooking rut I was in. In my free time I like to take long rides or sit by the water, both of which I find very relaxing. I also like to do counted cross-stitch and read. I dabble in photography, always looking for that elusive 'perfect' shot. I did more cooking before I started working full-time, and plan to again when I retire (still years away, but dreaming).
