Maple Broiled Scallops or Chicken Breast Bites

ingredients
- 16 sea scallops (or 16 1-inch pieces of chicken breast)
- 6 slices bacon, cut into thirds
- 1⁄4 cup maple syrup
- 1⁄4 teaspoon horseradish
directions
- Mix syrup and horseradish.
- Wrap each scallop or chicken piece with 1/3 strip bacon and secure with a toothpick. Place on broiler pan, brush with syrup, and broil 3 minutes.
- Turn, brush, and broil 2-3 minutes more, until bacon is crisp.
- Serve hot.

So this was the hit appetizer the Christmas Party I took them too! They didn't last and I probably cut up six thick chicken breasts. Awesome flavor and super simple to make. I didn't have the $ for Scallops so I just used chicken breasts. I quadrupled the horseradish and still really couldn't taste it though. Maybe I'll devote a whole bottle to the glaze, still didn't matter though. Taste was awesome! I broiled the chicken on a cooling rack over a pan to keep the chicken from cooking in the bacon fat. Just my personal taste. Also, I think Peppercorn bacon would have added a little more flavor over just normal bacon, but another personal taste. I always substitute pepper back for regular bacon. These were perfect! We had them as an 'appy dinner', which we sometimes indulge in...I used 2 chicken breasts, for the 18 nuggets, and the 6 slices of bacon worked out for me. I also used metal skewers, to ease the preparation. The bacon got crispy, and the maple syrup 'glazed' the chicken. Wonderful! Thanks for sharing, Brenda!
