Maple Curry Pork Tenderloin

"My sister-in-law made this one day and I loved it. I never would have tried it had I not tasted it first. It now makes a regular appearance in our dinner menus. It comes from the cookbook, 'Crazy Plates'. I have on occasion overdone the orange zest so now I often leave it out."

  • Trim pork of visible fat.
  • Place pork in a large resealable bag.
  • Wisk all the ingredients together and pour over pork.
  • Marinate for at least 1 hour.
  • Transfer pork and marinate to a small roasting or baking pan.
  • Roast, uncovered at 350 F for 40 minutes It should still be slightly pink.
  • Let stand for 10 minutes before slicing.
  • Drizzle with extra sauce and serve.

  1. Absolutely LOVED this recipe.... I did not have the orange zest or coriander and it turned out amazing.... this is probably my new favorite pork tenderloin recipe... The next time I make it, I think I will take the left over sauce and make a gravy to put over mashed potatoes. I marinated for about 4 hours and it came out really juicy. I will marinate over night next time.
     
  2. Very tasty! I followed another reviewer and doubled the curry powder. I baked it in a small dish and had lots of sauce, which was good with it - I could have even halved the marinade.
     
  3. Very nice flavor. I would have never thought of mixing maple syrup and curry together. I added a pinch of crushed red pepper flakes and marinated the tenderloin overnight. It was very moist and flavorful. Made for Best of 2010 Cookbooks Tag Game.
     
  4. Not bad at all. I didn't have any orange zest, but I had orange extract that I used. I also added a total of about 1 TBS of curry. My whole family liked it.
     
  5. This is a very flavorful recipe and I took the previous reviewer's advice and doubled the sauce! It was yummy over the pork and with the rice that I cooked. If the sauce were thicker, it would make a good barbecue sauce with the taste of maple and curry. I will add more curry and garlic next time to enhance the flavor even more I made this for spring pac 2010, thanks!
