Maple-Glazed Acorn Squash

- 2 acorn squash
- 2⁄3 cup maple syrup
- 1⁄2 cup soft breadcrumbs
- 1⁄4 cup margarine, softened
directions
- Trim ends of squash; then cut cross-wise into 1-inch slices. Discard seeds.
- Arrange squash slices in a single layer in a large baking pan prepared with non-stick spray. Season lightly with salt & pepper.
- Cover and bake at 350* for 30-35 minutes.
- Combine remaining ingredients and spread evenly over squash. Return to oven and bake UNcovered for 15 to 20 more minutes, basting occasionally with the accumulating juices.
