Maple-Glazed Acorn Squash

"From one of Charlotte's many recipe notebooks. Cut out of a magazine and marked with an asterisk. I've made a couple of changes. The original called for maple-flavored syrup and probably assumed you'd think of greasing the pan."

  • Trim ends of squash; then cut cross-wise into 1-inch slices. Discard seeds.
  • Arrange squash slices in a single layer in a large baking pan prepared with non-stick spray. Season lightly with salt & pepper.
  • Cover and bake at 350* for 30-35 minutes.
  • Combine remaining ingredients and spread evenly over squash. Return to oven and bake UNcovered for 15 to 20 more minutes, basting occasionally with the accumulating juices.
