- 1 cup maple syrup
- 2 tablespoons grated gingerroot
- 4 tablespoons lemon juice
- 3 tablespoons soy sauce
- 1 1⁄2 teaspoons minced garlic
- 1 bunch scallion
- 1 lb salmon
directions
- Preheat oven to 350 degrees.
- Mix syrup, ginger root, lemon juice, soy and garlic in a saucepan and bring to boil, stirring occasionally.
- Remove mix from heat.
- Grease appropriately sized baking pan with cooking spray or other greasing agent.
- Trim white bulb from scallions and discard, lay out greens of scallions in the bottom of the pan in a bed.
- Place salmon on scallion bed.
- Pour syrup mixture over salmon.
- Bake at 350 until fish is tender and flaky.
