“A simple and flavorful alternative to everyday pork dishes such as pork chops. This recipe makes a pork tenderloin into a gourmet-style dish. When it comes to making the apples, you may need to adjust the amount of butter and/or syrup to your taste. Also, feel free to add other spices such as garlic powder, italian seasoning, etc.”

  1. Preheat oven to 425°.
  2. Trim any fat from pork.
  3. Combine mustard, 2 tbs. syrup, chopped rosemary, salt, and pepper in a small bowl; brush over pork (if possible, let it marinate).
  4. Place pork on a broiler pan coated with cooking spray.
  5. Insert meat thermometer into thickest part of pork and bake at 425° for 25 minutes or until thermometer registers 160° (slightly pink).
  6. Place a nonstick skillet coated with cooking spray over medium-high heat until hot.
  7. Add apples, butter, and cinnamon; sauté 5 minutes.
  8. Reduce heat to medium-low; add 4 tbs. maple syrup.
  9. Simmer 10 minutes or until apple is tender, stirring occasionally.
  10. Cut pork crosswise into slices; spoon apple over pork. Garnish with rosemary sprigs, if desired.
