Maple Nut Carrot Salad

"This is a diabetic salad but if you don't need that use regular mayo and maple syrup. It's healthy and very tasty. Using the food processor to shred the carrots and slice the celery with the thick cut blade make very short work on this indeed."

  • In large bowl, combine carrot, raisin, celery and pecans.
  • In small bowl combine mayonnaise and syrup. Add to carrot mixture and mix gently to combine.
  • Cover and refrigerate till ready to serve.

  1. I'm in Carrot Heaven! Carrots are one of my favs and trust me -- this salad will not last long. I absolutely love the addition of the maple syrup -- it adds so much flavor. I did leave out the celery -- just my preference. I think chopped apple would be a great substitution for the celery to replace the crunch. DH is not a carrot fan, but I'm absolutely sure he will love it and if not, more for me! : ) : ) This recipe is going into my Best of 2013 Cookbook. So simple to make -- used my Ninja shredding attachment and it was done in a matter of seconds. Made for PRMR, January, 2014.
     
  2. Me and my son loved this carrot salad. DH didn't but it's probably because of the mayo or maple syrup. Anyway, it will be for my lunch and for my son. He wanted a bowl after his bath. I used pure maple syrup from my cousin. Thanks Annacia :) made for PRMR tag game
