I noticed after I started mixing the ingredients that it didn't call for any eggs. Since I wanted a fluffy muffin I couldn't resist adding one to the batter. These did turn out fairly fluffy, but a little crispy on the top and sides. The frosting was tasty. I didn't want to rate it since I had made a major change. Roxygirl

Oh my gosh, these muffins are fantastic! They're so flavorful and sweet. My mom and I both agreed that they were the best muffins we'd had in a long time. I used soymilk in place of the milk, and instead of using butter in the glaze I just added a little soymilk. I actually got 9 good sized muffins out of this! I will be making these for years to come!
