- 1⁄2 cup shortening
- 1 1⁄2 cups all-purpose flour
- 1 cup pure maple syrup
- 1 egg
- 1⁄4 cup milk
- 2 teaspoons baking powder
- 1⁄4 teaspoon salt
- 1 1⁄2 cups rolled oats
- 1⁄2 cup raisins
- 1⁄2 cup chopped walnuts or 1/2 cup chopped pecans
directions
- Preheat oven to 350°.
- Lightly grease a cookie sheet; set aside.
- In a large mixing bowl beat shortening with an electric mixer on medium to high speed for 30 seconds.
- Beat in half of the flour.
- Add maple syrup, egg, milk, baking powder, and salt.
- Beat until combined, scraping sides of bowl occasionally.
- Stir in remaining flour and the oats.
- Stir in raisins and nuts (dough will be soft).
- Drop dough by heaping teaspoons 2 inches apart onto the prepared cookie sheet.
- Bake about 13 minutes or until edges are light brown.
- Let stand for 1 minute on cookie sheet.
- Transfer to a wire rack and let cool.
- Store-layer cookies between waxed paper in an airtight container; cover.
- Store at room temperature for up to 3 days or freeze for up to 3 months.
