Maple Pork Chops

- 6 thick cut pork chops
- 2 tablespoons olive oil
- 1 large yellow onion, finely chopped
- 2 garlic cloves
- 1⁄4 cup real maple syrup
- 1⁄4 cup whole grain mustard
- 1 tablespoon white wine vinegar
- 1 teaspoon Worcestershire sauce
- 1 pinch chili powder
- salt and pepper
directions
- Preheat oven to 375.
- Add half of the olive oil to a large oven safe pan. Quickly sear the pork chops till they are just browned on each side and remove them and set aside in a baking pan. 9x13 works well.
- Add remaining oil and saute onion and garlic until onions are transparent being careful not to burn the garlic. Add remaining ingredients and bring to a simmer. let simmer for 5 - 6 minutes. Pour sauce over pork chops in the baking pan and cover. Cook for 35 - 45 minutes basting occasionally. uncover and cook 10 more minutes.
- Use a corn starch slurry to thicken sauce if desired.
