  • Place cornmeal in a medium saucepan. Gradually add milk, stirring with a wire wisk until blended.
  • Bring to a boil and reduce heat to medium.
  • Cook uncovered for 2 minutes, stirring constantly with a wire wisk.
  • Remove from heat, stir in butter, and set aside.
  • Combine sweet potatoes and next 6 ingredients in a large bowl.
  • Stir until well-blended.
  • Gradually add cornmeal mixture, stirring constantly.
  • Pour into a 1 1/2 quart casserole dish coated with cooking spray.
  • Bake at 350 degrees for 45 minutes, uncovered.
  • Let stand 10 minutes before serving.
  • Enjoy!
