- 4 slices thick-sliced bacon, diced
- 3⁄4 cup red bell pepper, diced
- 1⁄2 cup onion, diced
- 1⁄4 cup dry sherry
- 4 cups fresh corn kernels
- 1 cup heavy cream
- 1 teaspoon Tabasco sauce
- salt
- pepper
- 1⁄2 cup scallion, thinly sliced
directions
- Saute bacon in large saute pan until crisp.
- Pour off all but one Tbsp of drippings.
- Add bell pepper and onion and cook until soft.
- Deglaze with sherry until nearly evaporated.
- Stir in corn, cream, and Tabasco and simmer until thickened.
- Season with salt and pepper and then stir in the scallions.
