  • Saute bacon in large saute pan until crisp.
  • Pour off all but one Tbsp of drippings.
  • Add bell pepper and onion and cook until soft.
  • Deglaze with sherry until nearly evaporated.
  • Stir in corn, cream, and Tabasco and simmer until thickened.
  • Season with salt and pepper and then stir in the scallions.
