“This easy, mild cheese roll will become a favorite for appetizer or snack. It is a beautiful roll with its colors of gold and white, and you can turn up the heat on it by adding a chopped jalapeno pepper to the green chilies.”

  1. Set cheeses out at room temperature to soften.
  2. Place Velveeta between 2 sheets of waxed paper and roll out with a rolling pin. To roll, start at the center and roll outward. You want the cheese to form a rectangel as wide as the waxed paper is wide. Remove the top sheet of waxed paper.
  3. Spread the cream cheese over the Velveeta. Sprinkle with the diced chilies. Roll up as you would a jelly roll, removing the bottom sheet of waxed paper as you go. Set in the refrigerator to firm. Take out 20 minutes before serving.
  4. To serve: Lay roll on a platter. Garnish with parsley and watercress; surround with crackers.
  5. You can, if you wish, mix one or more additives into the cream cheese before spreading. Consider: chopped green onions, sliced black olives, pecans or walnuts, etc.
