- 1⁄2 tablespoon olive oil
- 1⁄2 cup onion, chopped
- 1⁄2 cup mushroom, chopped
- 1⁄2 cup zucchini, chopped
- 1 garlic clove
- 1 (14 ounce) can chopped Italian tomatoes
- 1⁄2 teaspoon table salt
- 1⁄2 teaspoon dried basil
- 1⁄4 teaspoon black pepper, freshly ground
directions
- Heat a medium saucepan.
- Swirl in the olive oil; add the onion, mushrooms and zucchini.
- Sauté until translucent, about 3 minutes.
- Add the garlic and sauté until just fragrant, 30 seconds more.
- Stir in the tomatoes, salt, basil and pepper; bring to a boil.
- Reduce the heat to low and simmer until thickened, at least 20 minutes and up to 1 hour.
