Directions

  1. Heat a medium saucepan.
  2. Swirl in the olive oil; add the onion, mushrooms and zucchini.
  3. Sauté until translucent, about 3 minutes.
  4. Add the garlic and sauté until just fragrant, 30 seconds more.
  5. Stir in the tomatoes, salt, basil and pepper; bring to a boil.
  6. Reduce the heat to low and simmer until thickened, at least 20 minutes and up to 1 hour.
