  1. Chop onion and garlic.
  2. heat oil in a medium pot to medium heat (5/10).
  3. stir in onion and garlic and cook until soft, about 10-15 minutes.
  4. stir in tomatoes and tomato paste, making sure to mix residual oil well.
  5. simmer 5 minutes, stirring occassionally.
  6. stir in parsley, basil, and oregano.
  7. add salt and pepper to taste.
  8. simmer for 15+ minutes, adding salt as necessary to get desired level of sweetness.
  9. the longer the sauce simmers, the better the flavors will mingle.
