- 1 (16 ounce) can red kidney beans, drained
- 1 (14 ounce) can cut green beans, drained
- 1 (16 ounce) can garbanzo beans, drained
- 1 (16 ounce) can black-eyed peas, drained
- 2 1⁄2 cups chopped celery
- 1 cup finely minced parsley
- 1 bunch green onion, sliced
- 3 ounces jar stuffed green olives, halved
- 4 1⁄2 ounces chopped black olives
- 1⁄2 cup olive oil
- 1⁄2 cup red wine vinegar
- 1 teaspoon salt
- 1⁄8 teaspoon pepper
- 2 tablespoons brown sugar
- 2 garlic cloves, minced
directions
- Combine drained beans in a large colander, rinse with water. Drain and pour into a large mixing bowl.
- Add celery, parsley, green and black olives, and chopped green onions.
- Combine salad oil, vinegar, salt, pepper, brown sugar and minced garlic.
- Pour over bean mixture. Mix lightly, cover, and refrigerate overnight.
- Toss mixture well and serve in lettuce cups.
