Marinated Bean Salad

"There are as many bean salad recipes out there as beans. This is another good one. To spice it up a little, a few pickled jalapeno pepper slices can be added. Cook time is refrigeration time."

  • Combine drained beans in a large colander, rinse with water. Drain and pour into a large mixing bowl.
  • Add celery, parsley, green and black olives, and chopped green onions.
  • Combine salad oil, vinegar, salt, pepper, brown sugar and minced garlic.
  • Pour over bean mixture. Mix lightly, cover, and refrigerate overnight.
  • Toss mixture well and serve in lettuce cups.

I am now semi-retired and an Empty Nester. I try to focus on lighter dishes for day to day menus. I still like to explore new food ideas. I look for smaller quantity dishes now.
