- 3 tomatoes, sliced thick
- 2 teaspoons chopped fresh basil
- 2 teaspoons olive oil
- 2 teaspoons lemon juice
- 1⁄2 teaspoon sugar
- 1⁄4 teaspoon pepper
directions
- Place tomato slices in shallow serving dish.
- Sprinkle with basil.
- Mix remaininging ingredients.
- Pour over tomatoes.
- Serve at room temperature.

The mix of ingredients really highlights fresh tomato flavor. Getting the sugar dissolved was a bit challenging, but it was great - it toned down the sometimes too-acidic bite of the tomatoes. We did add a tiny bit of salt, but only once the tomatoes were on the plates, rather than add it to the marinade. We normally dress tomatoes with balsamic vinegar, olive oil, basil, and sometimes fresh mozzarella, but this was an excellent change of pace. We had it with grilled steaks for a simple, summery supper. Very nice recipe.

After DH and I moved away from the farm, and to the city...I haven't done as much cooking and very little canning. But I do come to Zaar and look for new recipes once in a while. I'm still cooking Zaar!!
I like to play at Facebook, with my family and friends. A lot of my Zaar friends are there!! Yay! It's a good way to keep in touch.
We travel more. We're looking at the European trips now. Hope to go in the springtime. I really want to see London, I think I lived there in a past life, I've been obsessed with it since I was 10 years old!!
