- 1 cup cornmeal
- 1 1⁄2 teaspoons baking soda
- 3⁄4 teaspoon salt
- 1 cup cream-style corn
- 1 cup evaporated milk
- 2 eggs
- 1⁄4 cup bacon drippings or 1/4 cup other oil
- 1 large onion
- 3 jalapeno peppers
- 1 lb ground beef
- 1⁄2 lb cheddar cheese, grated
directions
- Preheat oven to 350 degrees F.
- Brown hamburger together with onions and jalapeños.
- Mix cornmeal, baking soda, and salt. Beat eggs and add milk, cream style corn, and bacon fat. Beat into dry ingredients.
- Heat and grease a 10-12 inch cast-iron skillet. Pour in half of the batter. Spread the hamburger over that, and then sprinkle on the grated cheese. Top with remaining batter.
- Bake for 45-50 minutes. Good with a salad or pinto beans.
