  • Preheat oven to 350 degrees F.
  • Brown hamburger together with onions and jalapeños.
  • Mix cornmeal, baking soda, and salt. Beat eggs and add milk, cream style corn, and bacon fat. Beat into dry ingredients.
  • Heat and grease a 10-12 inch cast-iron skillet. Pour in half of the batter. Spread the hamburger over that, and then sprinkle on the grated cheese. Top with remaining batter.
  • Bake for 45-50 minutes. Good with a salad or pinto beans.
