Marmalade Fruit Muffins

"The marmalade gives these muffins and lively flavour. Any marmalade will do but seville is the best.Found this recipe in one of my pickling books called Small Batch Preserving. I found it easy to make and good as well."

  • Combine flour, baking powder, salt and baking soda in a medium bowl; set aside.
  • Cream sugar and butter; beat in eggs. Stir in marmalade until blended.
  • Fold in 1/2 of the flour mixture. Add orange juice until combined and add the remaining flour mixture and cranberries, raisins or nuts.
  • Spoon into greased medium muffin pan using 1/2 cup of mixture.
  • Bake at 375°F oven for 20 minutes or till lightly brown and firm to the touch.
  • Makes about 18 muffins.

  1. The smells from the oven were driving the lot of us batty and could hardly wait for it to be morning so we could enjoy some of its orangey goodness! I decided to bake the batter in a bundt pan instead of muffins. I also made an orange glaze with 1 cup powdered sugar and 1/4 orange juice to drizzle over the top of this beauty. If I could give this recipe more stars, I would. Out of this world... perfect balance between sweet and bitter. I used Dundee's Seville Marmalade for this recipe. Thanks so much for sharing!!
     
  2. great muffin! I reduced the sugar to 1/3 cup due to the use of the 1 cup marmalade. As for that, I used a 'forest fruits' blend that is strawberries, blueberries, raspberries and blackberries. Sticky and delicious.
     
  3. These were lovely, a bit more like cupcakes than muffins, though! :) So sweet they will shock your back teeth at first, slightly sticky, very yummy. The technique threw me at first, because it is not the usual way I make muffins. Also, 1/2 a cup of batter was far too much for each muffin. I used 1/2 cup and only got 11 muffins, and they spread out on top, obviously too much batter for the cup. 1/3 cup or even a rounded 1/4 cup would be perfect (for my pan, YMMV). I did make a couple of substitutions: 1 c. whole wheat flour (for a little nutrition), 1/2 c. apricot preserves (I thought I had a whole cup of marmalade! :( the preserves didn't alter the flavor though, I believe), and I used raisins. Thank you for posting this recipe, I will be adding it to my other muffin recipes! Made for ZWT4.
     
  4. These are REALLY good! I subbed in 1 cup of whole wheat for 1 cup of the all-purpose flour. I made mine in a mini-muffin pan and got 36 little guys. I love the tartness every so often from the orange rind in the marmalade and the dried cranberries. I think next time I will add in some orange extract into the batter. Mmm. Thank you for a great low fat breakfast!
     
  5. Terrific muffins-I added white choc chips to make them more kid friendly and they were eaten straight from the oven after school. I love the caramel colouring of them and that bit of stickiness too - great snack so thanks to Brenda for posting - made for PAC07.

I used to teach 6 days a week; crafts like quilting, dried wreaths, Christmas ornaments, etc.</p> <p>I &nbsp;had open heart surgery and recovered nicely.I am not the best patient in the world as I want to get going and get back to work and my life as I knew it.</p> <p>I have retired and do help out at a soup kitchen for the homeless and 1 morning a week I make French Toast at a community center that supplies 26 schools with free snacks and sandwiches&nbsp; for the kids <br />I have been knitting blankets for Blankets for Canada an organization that helps the&nbsp;homeless keep &nbsp;a little bit warmer. I also knit for many different charities that supply kids with warm clothes.
