  1. Preheat oven to 400°F Line or greade muffin cups.
  2. Whisk together dry ingredients.
  3. Whisk together butter, brown sugar, pumpkin, egg whites, and vanilla. Add to dry ingredients and stir till combined, Do not overmix. Fold in raisins.
  4. Divide batter among muffin cups. Bake at 400F until a toothpick poked into the center comes out clean (about 30 min). Cool for 10 min, then remove from pan and cool completely.
