Mary Ann's Zucchini Bread

  • In a large bowl mix eggs, sugar, and oil together.
  • Add zucchini.This will be a soupy-like consistency.
  • Add vanilla.
  • Mix in dry ingredients.
  • Grease and flour 2 loaf pans.
  • Bake at 350°F for 1 hour.
  • This can be wrapped in aluminum foil, put in ziploc bags, and frozen when cool.

I currently work as a secretary for a glaucoma practice. I love to cook and bake. I love things spicy , the hotter the better, but tend to have to dull things down for everyone else in the family
