Maryland Crab Cakes, the Real Deal
"My mom made these when I was just a kid. Several years ago, DH took his first post-retirement job as Seafood Supervisor in a local grocery chain, made these for the seafood department, and the word spread, so that they were taking phone orders for "HIS" crab cakes ! The owner told him that Matzo Meal in place of the bread crumbs works very well due to the soda cracker addition."

- Serves:

ingredients
- 3 teaspoons Old Bay Seasoning
- 2 tablespoons parsley flakes
- 1⁄2 teaspoon dry mustard
- 4 tablespoons mayonnaise
- 2 large eggs
- 2 tablespoons Worcestershire sauce
- 1 cup breadcrumbs
- 2 lbs backfin crab meat (or lump)
directions
- Mix first 6 ingredients in a large bowl.
- CAREFULLY fold in crabmeat by hand into well blended ingredients, so as not to break up crab lumps.
- Add bread crumbs and, using hands, blend all ingredients -- still taking care to not break up lumps.
- Carefully form into 10 slightly flattened cakes.
- Refrigerate cakes several hours or overnight.
- Prepare by either frying in olive oil or butter, or broiling.
- Note: Frying in electric skillet in a little olive oil and butter for several minutes per side works very well for me.

These were amazing, really simple to put together and a beautiful blend of flavors. The texture was perfect as well, just thick enough to handle and form well, but light enough to have a slight "fluffiness" in the middle when cooked. -
These are amazing, just what I was looking for, the minimum necessary mayo and bread crumbs to help the cakes hold together. IMHO, these only taste right with fresh Maryland crab meat (or shall we say, unpasteurized crab meat, which retains the full natural flavor our the Maryland Blue Crab). I took the liberty of adding 1/4 teaspoon of onion flakes. If you can only get pasteurized crab meat or canned crab meat, I recommend you had some chopped pickle or bell peppers to add some pizzazz. Fortunately we have a source for fresh crabmeat on the Eastern Shore of Maryland, and we also found fresh crab meat on the Outer Banks of North Carolina (because they finally discovered the local bounty they had been ignoring). I put my formed crab cakes on parchment paper in the freezer for about 15 minutes to help them hold their form. I used my 8-qt. Le Creuset Dutch Oven with a thin layer of grapeseed oil to "fry" the cakes - sure saved me from oil splatter! As expensive as Maryland Blue Crab meat is today, this is the only recipe I want to use!

Both DDs and 2 DGC celebrated with us. <br /><br />DH and I live about 40 miles north of Baltimore, in what WAS rural 40 years ago. We are empty-nesters. Have 2 adult daughters, 2 great SIL, and 3 grandchildren --1 is 22, and 16 year old twins. In September of 2011, we were presented with our first GREAT-grandson ! They all live in PA. and are VERY busy people ! <br /><br />I retired from MANY facets of nursing 12 years ago, and LOVE being in charge of myself ! <br /><br />We had a 4-couple Gourmet Group for so many years, that we ran out of new things and themes. Now we meet at restaurants, to avoid trashing the kitchen as well as the budget. We started with 7 course meals! None of us can DO that anymore !! <br />We have been VERY fortunate to be able to travel more than we ever dreamed !! Have B&B'd in Great Britain many times; visited Italy, Greece, France, Australia, New Zealand, Germany, Switzerland, and Iceland (in February !) We would far rather stay in B&B, or self-catering apartment or dwelling, than be on a tour. Our trip in '09, was to 2 small towns in Sicily --Sant'Alfio, on the slope of Mount Etna, in a 15th century, converted winery --and a week on the north coast near Cefalu. Very few spoke English, but everyone was helpful and we managed to communicate, and had a wonderful time ! (Photos in Gallery on website below !) We returned there in Sept. '11, for a 2 week vinyard tour with a small group, led by our local wine store owner - whose family is still in Sicily ! <br /><br />DH is my photographer - (and a website designer) but he insists on set-up time as well as a hot meal ! I should plan ahead for serving appeal, so he can get the best shot. <br /><br />I am now a SIX year survivor of colon cancer, as of 5/11, and four year of thyroid. Angels on my shoulder found both lesions before I even had symptoms !
