  1. Place cauliflower florets in a steamer basket over boiling water, cover and steam until very tender, 12 to 15 minutes.
  2. Place the cooked cauliflower in a food processor.
  3. Add salt & pepper; pulse several times, then process until smooth and creamy.
  4. Transfer to a serving bowl and garnish with chives &/or optional cheese sprinkles. Serve hot.
