Directions

  1. Bring chicken stock to a boil.
  2. Add all other ingredients.
  3. Cover and cook over a medium heat for 12-15 minutes or until the peas are soft.
  4. Mash pea mixture or puree them in a blender.
  5. Return the puree to a pot and simmer to rewarm.
  6. Serve in soup bowls.
  7. Garnish with a sprig of parsley or a twist of black pepper is desired.
