Ingredients: 2 1/2 lbs potatoes, peeled and cubed; 1 tablespoon butter; 1 tablespoon onion, grated; 8 ounces ricotta cheese; 8 ounces sour cream; 1 teaspoon salt; 1 teaspoon garlic powder; 1/2 teaspoon dried rosemary, crushed; 1/4 teaspoon pepper; 2 egg whites; 2 tablespoons dry breadcrumbs

"Long ago, when we were in a "Gourmet Group", I served something very similar to this, only it had another layer of something. I recall it was green, but not the veggie nor the prep. This serves well with almost any meat, and being self-contained, stays attractive on the plate. Low fat ricotta and sour cream can be substituted."

ingredients

2 ¹⁄₂ lbs potatoes, peeled and cubed
1 tablespoon butter
1 tablespoon onion, grated
8 ounces ricotta cheese
8 ounces sour cream
1 teaspoon salt
1 teaspoon garlic powder
¹⁄₂ teaspoon dried rosemary, crushed
¹⁄₄ teaspoon pepper
2 egg whites
2 tablespoons dry breadcrumbs

directions

Place potatoes in saucepan, cover with water, and bring to boil.
Reduce heat, cover, and cook for 20 minutes, or til tender.
Drain; mash potatoes with butter and onion until small lumps of potato remain.
In a mixing bowl, beat ricotta, sour cream, salt, garlic powder, rosemary and pepper until smooth.
In a small bowl, beat egg whites until frothy; fold into cheese mixture;.
Fold all into potato mixture.
Generously coat muffin tins (or small ramekins) with non-stick spray.
Sprinkle muffin cups with bread crumbs.
Fill with potato mixture, smooth tops.
Bake uncovered at 425 degrees F. for 27-30 minutes - or until edges of potatoes are slightly browned.
Cool on baking sheet for 15 minutes.
Loosen timbales from sides of muffin cups; invert onto baking sheet to remove.

These made a lovely surprise for our dinner served along with sausages, peas, and caramelised red onions. I would certainly serve these to guests. I do feel they need a gravy or sauce with them though as I found them a little dry but that could have been because of the potatoes I used. I plan to have them again soon with a mushroom sauce like Baby Kato. I made half the recipe and made into 3 Ramekins. They came out beautifully. Thanks for such a great dish fit for company. Baby Kato
I served these with Prime Rib yesterday, and they were very good when paired with the au jus. I found them to be a bit bland, and even though my muffin tins were sprayed generously, they did not come out of the pan as well as I thought they would. I think they would be fabulous served similar to yorkshire pudding with a roast...(sitting in the au jus around a roast).

I scaled back for 6 and filled 6 muffin holes plus a small ramiken, I did omit the onion for allergy reasons otherwise made as per the recipe but like a previous reviewer found them a little dry and the DH commented that he would have preferred some cheddar cheese to go into the mix to give flavour, otherwise they were enjoyed and would make again but try half ricotta and half cheddar and add some spring onion as the DH doesn't have a problem with that though he does regular onion. This photo of DH and me was taken on our 50th anniversary, 12/27/08. Both DDs and 2 DGC celebrated with us. DH and I live about 40 miles north of Baltimore, in what WAS rural 40 years ago. We are empty-nesters. Have 2 adult daughters, 2 great SIL, and 3 grandchildren --1 is 22, and 16 year old twins. In September of 2011, we were presented with our first GREAT-grandson !  They all live in PA. and are VERY busy people ! I retired from MANY facets of nursing 12 years ago, and LOVE being in charge of myself ! We had a 4-couple Gourmet Group for so many years, that we ran out of new things and themes. Now we meet at restaurants, to avoid trashing the kitchen as well as the budget. We started with 7 course meals! None of us can DO that anymore !! We have been VERY fortunate to be able to travel more than we ever dreamed !! Have B&B'd in Great Britain many times; visited Italy, Greece, France, Australia, New Zealand, Germany, Switzerland, and Iceland (in February !) We would far rather stay in B&B, or self-catering apartment or dwelling, than be on a tour. Our trip in '09, was to 2 small towns in Sicily --Sant'Alfio, on the slope of Mount Etna, in a 15th century, converted winery --and a week on the north coast near Cefalu. Very few spoke English, but everyone was helpful and we managed to communicate, and had a wonderful time ! (Photos in Gallery on website below !) We  returned there in Sept. '11, for a 2 week vinyard tour with a small group, led by our local wine store owner - whose family is still in Sicily ! DH is my photographer - (and a website designer) but he insists on set-up time as well as a hot meal ! I should plan ahead for serving appeal, so he can get the best shot. I am now a SIX year survivor of colon cancer, as of 5/11, and four year of thyroid. Angels on my shoulder found both lesions before I even had symptoms !
