  • 1 medium butternut squash
  • 2 tablespoons butter
  • 1 pinch nutmeg
  • 1 dash salt and pepper

  • Heat oven to 400 degrees F and line a baking sheet with foil.
  • Cut the top and bottom off the squash. Cut into quarters. Put the pieces skin side up and bake for about 45 minutes.
  • Let the squash sit until it is cool enough to handle and scoop and the seeds. Scoop out the flesh into a bowl and add the butter and nutmeg. Mash with a potato masher and add salt and pepper to taste.
