- 453.59 g dried black-eyed peas
- 283.49 g can Ro-Tel tomatoes
- 1 large onion, chopped
- 1 small green bell pepper, chopped
- 226.79 g salt pork (cut bite size) or 226.79 g bacon
- 4.92 ml basil
- 1 bay leaf
- 4.92 ml garlic salt
directions
- Rinse peas, place in pot with seasonings.
- Cover with water.
- Cook uncovered (adding water as needed) till done.
- Serve over rice with jalapeño corn bread.

I was in dire need for some blackeyed peas and I found this wonderful recipe. I happened to have all the ingredients on hand except the salt pork/bacon. But I did have one ham hock and one very thick boneless pork chop. I cut up the chop and sauted it a little and threw it in with the ham hock. Cooked for about 2 1/2 hours. and gorged. and I loved every minute. Thanks for a great recipe.
