1 cup Bisquick
¹⁄₂ cup milk
1 egg
¹⁄₂ cup pancake syrup
2 eggs
2 slices cooked bacon, halved
2 slices American cheese

directions

Combine first four ingredients in a medium bowl.
On a hot griddle, using a 4 inch ring, cook pancakes until dry around edges (about 2 minutes). Turn over and cook until golden brown (about 2 minutes). You may have extra batter. Feel free to make more pancakes and freeze them until you need to make more sandwiches.
When ready to make sandwich, heat a skillet and spray with cooking spray to prevent sticking.
Crack 1 egg into an egg ring placed in a frying pan over high heat and poke the yolk with a fork so that it flows throughout the egg and cooks evenly. When the egg becomes frim, carefully remove the ring and flip the egg over to its other side. Repeat with second egg.
On the heel of the pancake, place the cheese down first, followed by the bacon, and then the egg last. Top it with the ‘crown’ pancake and enjoy.
If you are using premade, frozen pancakes, toast them in a toaster on pastry setting or quickly zap them in the microwave before using.
