  • Mix the corn and the tomatoes.
  • In a separate bowl, mix the eggs, vanilla, sugar and milk. Add corn tomato mixture, the dry ingredients & the cheese, reserving some cheese for the top.
  • Pour into a buttered 2 quart dish & bake in a preheated 350ºF oven for 75 minutes or until set.
  • Serve warm or cold.

  1. I just wasn't really sure whether we would like this or not, but we did. I will admit that I will probably not put the sugar in next time, but other than that, I loved it.
