  • 44.37 ml vegetable oil
  • 709.77 ml coarsely grated raw potatoes
  • 236.59 ml grated cheese (I like cheddar)
  • 177.44 ml any cooked meat (ham, hamburger, chicken, turkey...)
  • 59.14 ml chopped onion
  • 236.59 ml evaporated milk
  • 2 eggs
  • 2.46 ml salt
  • 0.59 ml pepper

Directions

  1. Squeeze excess liquid from potatoes then mix together with vegetable oil.
  2. Press into 9" pie pan and bake for 15 minutes, or until just beginning to brown, in 425 degree oven.
  3. Remove from oven and lay on cheese, cooked meat, and onion.
  4. In a bowl beat together milk, eggs, salt and pepper. Pour over meat mixture.
  5. Return to oven and bake for 30 minutes or until a knife inserted 1" from edge comes out clean.
  6. Allow quiche to cool 5-10 minutes before cutting into wedges.
