Meatballs

"I wanted meatballs for dinner one night but I was also craving something crunchy. So I experimented a little bit and came up with this recipe. It is super simple to make and has so much flavor. I use sausage for this recipe. You can get ground sausage or you can use Italian Sausage Links. Just remove the casings. I also use Panko breadcrumbs. I leave mine in the freeezer so that they do not get stale. You can use regular italian breadcrumbs but I think that Panko just add something better. I hope you enjoy this recipe."

  • In a large bowl add your sausage, ricotta cheese, onion, and 1 egg.
  • Combine everything together and roll meat mixture into balls. I think bite size smaller ones are best.
  • Set up a dredging station with Flour, remaining egg (mixed with 1 tablespoon of water), and breadcrumbs.
  • Rolls meatballs in flour mixture, the into the egg mixture, and then finally into the breadcrumb mixture.
  • In a large skillet at your vegetable oil and put in a medium -medium high heat. MAKE SURE YOUR OIL IS HEATED THROUGH BEFORE YOU ADD YOUR MEATBALLS. IF YOU DON'T YOUR MEATBALLS WILL BE SOGGY!
  • Add your meatballs once your oil is heated up. It takes about 10 minutes for your meatballs to cook all of the way (size of your meatballs will affect cook time. The smaller they are the less time you will need).
  • Your meatballs should have a nice golden crisp crust on them. If you are cooking on a medium heat your meatballs should be completely done by the time your crust is beautifully crisp and crunchy. Just make sure you keep moving the meatballs for EQUAL cooking.

Cooking has really taken my interest in the past couple of years. Even more since my boyfriend and I moved in together over a year ago. I am so interested in making nice, homey kind of meals. I like people to eat my food and kind of relax or feel very comfortable with it all. I do believe you can do that with your cooking. I like collecting recipes and even writing a few of my own. Sometmes they may be just a different something to a classic recipe or sometimes it is just something new altogether. I'm a flavor queen. I love love love flavoring things. I like for you to eat my food and it not need anything else but what is already there. I'm always looking for something new and I do make EVERYTHING usually before I post it here.
