Meatloaf Sandwiches (Ww)

  • Preheat oven to 350 degrees F.
  • Line a 9 x 13 inch baking pan with foil.
  • In a skilled over medium heat, heat the oil and then add onion, and cook stirring occasionally until softened (5 minutes). Stir in vegetables (zucchini - celery) until softened (5 minutes). Stir in mushrooms and garlic and cook for another 3-5 minutes. Remove from heat and vegetables cool for about 15 minutes.
  • Meanwhile combine the next 7 ingredients (chicken - Italian seasoning) in a bowl. Fold cooled vegetables into chicken mixture and then place mixture into baking pan.
  • Bake for 1 hour or until browned. Let stand in pan for 10 minutes. Unmold and allow to cool.
  • Slice meat loaf into 6 slices.
  • To make sandwiches: spread 1/2 T catsup on each side of bread. Layer bread with lettuce, 1 slice meat loaf, topping with lettuce and bread. Repeat to make six sandwiches. Cut sandwiches in half and garnish with cheery tomato if desired.

  1. Tasty meatloaf recipe. I used ground turkey, and used 2 eggs as I do not use egg substitute and followed the rest of the recipe as listed. I did not make a sndwich with the meatloaf, we enjoyed it alone.

Oh...this was SO good!!<br/>I also used real egg, as I can't seem to find egg substitute here in Oz (although I'm sure that it must exist!)<br/>It initially looks like the veggies will dominate the meat,but remember that they do cook down!!<br/>This was so flavoursome with lovely texture from the veggies-we really enjoyed it.....so much so that I keep nibbling at the leftovers in the fridge (such a good job that it's Ww!!).<br/>I'll be making this again without doubt...thanks Ellie!

<p>I love cooking and trying different foods, but my favorite cookbooks are now Weight Watchers or low fat/low cal cookbooks as I tend to try and make low fat/low cal recipes. I lost over 90 pounds on Weight Watchers and have maintained for over a year now -- so my cooking/eating habits have changed drastically following my weight loss and to keep it off!</p>
