  • Cook spaghetti according to package directions;drain.
  • Run under cold water; drain well.
  • Meanwhile coat large nonstick skillet with cooking spray; heat over medium heat.
  • Add onion; cook until softened, 5 minutes.
  • Add beef; cook,stirring until browned, 5 minutes.
  • Remove to large bowl; stir in spaghetti sauce and tomatoes.
  • In separate large bowl, beat eggs with salt and pepper; stir in 1/2 cup cheese and spaghetti.
  • In same skillet, cook spaghetti mixture over medium-high heat until bottom is slightly crisp, 5 minutes.
  • Top with meat sauce mixture.
  • Cook covered, until heated through, 5-8 minutes.

  2. Such an easy recipe. We loved the spaghetti slightly browned on the bottom, what a great idea. I did add oregano and 1/8th. tea. of crushed fennel seed (a personal favorite). We will make this many more times and think of you while enjoying this tasty dish. Thank you!

I am a busy single mom of 5 growing boys!! My children's ages are 21,18,14,12 and 10 1/2. In my spare time,when I have any, I try to walk 3 miles a day.I like to read Woman's World and inspirational books and if I didn't have 5 beautiful boys to care for, I would probably be doing missionary work. I live in the beautiful Okanagan Valley in British Columbia and I swear we must be living in Heaven on earth!!!I would love to travel if I had the resources and time with Brazil and South America being on the top of my list of places to see.
