Mecan Mash

"This is a "stepped up" version of "Hobo Spuds" as perfected on a camping trip with my Grandson Max and his Mom and Dad. Mecan Mash got started on Max's first Hunting trip for Turkeys when he was 11 years old. After hunting his Mom and I first tried as a tin foil cooking on the fire. A later trip we did it all in a heavy fry pan over campfire. Butter used instead of lard. Wow, was very good! TIP: Be sure that the Spam and potatoes get that dark brown crispy crust for extra deliciuos bites combined with the butter used as cooking oil."

  • Open cans of potatoes and set by the fire to warm the potatoes. Leave lids on as handles to later remove from the fire.
  • Slice Spam into strips 3/8" x 1 1/2". Fry in butter in heavy fry pan until dark brown crust on all sides. Set aside, do not drain butter.
  • Fry onions until caramalized and brown. Set aside.
  • Add butter to pan, drain liquids from potatoes, "pat dry" as possible. Fry until golden crispy on both sides.
  • Add Spam and onions back into fry pan and cover with cheese. Return covered fry pan to fire to melt the cheese into the layers. Remove from fire and serve.
  • Serve with a spicy Bloody Mary, cold Lennies Creamy Dark Beer or smooth Merlot wine. Enjoy!

Having spent the last 40 years selling recreational equipment in Southern Wisconsin, I have closed my business and finally have time to cook. I never sold anything that anyone ever "had to have". SO NOW I'M LEARNING HOW TO PREPARE THINGS, FOLKS HAVE-TO-HAVE! Been great fun and love to expermint. My wife says I cook weirdsville.
