  • Cook rice as directed on package.
  • While rice is cooking, heat large nonstick skillet sprayed with cooking spray on medium heat. Add chicken and onions; sprinkle with oregano. Cook chicken 3 minute on each side or until chicken is lightly browned on both sides and onions are crisp-tender.
  • Add tomatoes, dressing and garlic; stir gently. Continue to cook 4 to 6 minute or until chicken is cooked through (165ºF), turning chicken after 3 minute Stir in olives.
  • Serve chicken over rice with sauce.

  1. This was a very quick & easy recipe to prepare! As a personal preference, I served over rotini rather than rice. I didn't like it very much at all - the sauce was too sweet. But, my husband loved it! So, I gave the 4 star rating as a compromise!

  3. We liked this a lot! The olives were an especially nice touch and reminded me of chicken cacciatore. I think adding additional veggies such as chopped celery and sliced mushrooms would be wonderful as well. Thanks for sharing. Made for ZWT4 Zingo for Kumquat's Kookin' Kaboodles. ~Sue

I am the mother of three, wife of one :) My teenager is the pickiest eater in the world, while my 3 year old will eat anything (though has been acting more and more fickle lately). Our newest addition was born in June 2008, so she doesn't really know much in the way of varieties of food. My husband says "I don't care what you fix, as long as it has meat in it." I have thousands of recipes saved on my computer from over the years, and am constantly on the lookout for new ones. I also seem to have accumulated hundreds of cookbooks over the years. I am (slowly) trying to go thru all the recipes I have saved and add them to 'Zaar, but this will take some time.
