Mediterranean Chicken Parcels

  • Cut four pieces of foil about 10 in square. Brush the squares with the oil and set aside until needed.
  • With a sharp knife, slash each chicken breast at intervals, then slice the mozzarella and place between the cuts in the chicken.
  • Divide the courgettes and tomatoes between the pieces of foil and sprinkle with salt and pepper. Roughly chop the basil or oregano and scatter over the vegetables in each parcel.
  • Place the chicken on top of each pile of veggies then wrap in the foil to enclose the vegetables and chicken, tucking in the ends.
  • Place on a cookie sheet and bake in a preheated 400°F oven for about 30 minutes.
  • To serve, unwrap each foil parcel and serve with rice or pasta.

  1. *Reviewed during ZWT5* This was an easy dinner to put together and had great flavours. I made my parcels in the afternoon and kept in the fridge until ready to start cooking. The chicken didn't brown.....but it did taste wonderful. The cheese oozed through everything and the tomatoes,basil and zucchini were all steamed perfectly. Took about 40 minutes to cook for me....but I think my chicken breast fillets were quite large. photo alsoto be posted
     
  2. This was DELICIOUS! More poached than roasted, I agree with the previous reviewer, to broil the chicken a little before serving for a little color and texture. I used yellow tomatoes, which gave a nice color combination with the zucchini and a little less acid, and I used both basil and oregano ~ perfect flavor, the spices stuck to the melted cheese and it made for a delicious meal all around. A quick and easy way to create a healthy low fat dinner with the added bonus of easy clean-up! Thanks JulieB ~ made for ZWT5 ~ SPAIN!
     
  3. I made this for the ZWT III Freezer Pleaser Challenge, and I think it would freeze and thaw better than it did for me. What I should have done (and didn't do) was blanch the zucchini before freezing (and possibly the tomato while I was at it), make sure it thaws COMPLETELY (my fridge won't do this overnight), and drain off some of the excess liquid before cooking. I think that if I had done it that way, this dish would have been delicious! As it was, it was very good to me, but not so good to my husband, roommate, and daughter. What I did do, which I would recommend, was open the parcel and broil the chicken for a few minutes after cooking just to get some nice color on everything.
     
  4. This dish was easy to make and easy to clean-up, I recommend marinating the chicken in something or seasoning it, but everything else was fantastic and it worked really well over angel hair pasta and looked awesome! Thanks for sharing it.
