  1. In a large bowl, combine ground lamb, garlic, mint, parsley, cumin, coriander, pepper, and salt. Shape mixture into 5 patties.
  2. Preheat grill to medium-high heat (350-400). Spray grill with nonstick nonflammable cooking spray.
  3. Gril, covered wtih a grill lid, for 7-8 minutes on each side, or until an instant0read thermometer reads 160 degrees when inserted in the center.
  4. In small bowl, combine yogurt, cucumber, pistachios, cilantro, salt, and pepper.
  5. Spread desired amount of Cucumber yogurt sauce over pita rounds. Top each with lamb patty. Garnish with cucumber, pistashios, and fresh mint if desired.
