Mediterranean Mozzarella Chicken

- 1 lb boneless skinless chicken breast half (about 4 small)
- 1 red onion, halved, sliced
- 1 zucchini, chopped
- 1⁄4 cup KRAFT Tuscan House Italian Dressing and Marinade
- 1⁄2 cup grape tomatoes, halved (could also use cherry tomatoes, halved)
- 1⁄2 cup pitted black olives
- 1 cup mozzarella cheese, shredded
directions
- Heat a large nonstick skillet sprayed with cooking spray on medium-high heat. Add chicken; cover skillet with lid. Cook about 5 to 7 minute on each side or until chicken is done, adding onions and zucchini after 5 minute
- Add the dressing, tomatoes and olives; cover. Cook on medium-low heat about 2 minute or until heated through.
- Stir mixture. Top with cheese; cover. Cook 2 minute or until cheese is melted.

This was quick, easy and very tasty! I used 1 lb. of thin-sliced chicken cutlets, which really made it go pretty quickly. I was able to find the Kraft Tuscan House dressing (which I had never tried) and used pitted kalamata olives sliced in half. We really enjoyed this with some brown rice. Thanks for sharing this keeper! Made for Spring PAC 2010.

My teenager is the pickiest eater in the world, while my 3 year old will eat anything (though has been acting more and more fickle lately). Our newest addition was born in June 2008, so she doesn't really know much in the way of varieties of food. My husband says "I don't care what you fix, as long as it has meat in it."
I have thousands of recipes saved on my computer from over the years, and am constantly on the lookout for new ones. I also seem to have accumulated hundreds of cookbooks over the years. I am (slowly) trying to go thru all the recipes I have saved and add them to 'Zaar, but this will take some time. I try to only post things that my family (or I) will eat (though I haven't necessarily yet tried every recipe I have posted).
