Directions

  1. Preheat the oven to 350 degrees.
  2. Line a 12 cup muffin tin with paper baking cups.
  3. Mix all dry ingredients together in a bowl.
  4. Mix together spinach, eggs, olive oil and milk in a separate bowl.
  5. Add dry ingredients to spinach mixture. Do not overmix.
  6. Fold in the feta, olives and onion.
  7. Divide evenly in muffin cups.
  8. Bake for 20-25 minutes.
