  • 1. Prepare orzo to package directions, let cool.
  • 2. Warm oil in frying pan, saute tomatoes and spinach until spinach is slightly wilted. Add salt and allow to cool.
  • 3. Whisk olive oil, balsamic vinegar, salt and pepper.
  • 4. Combine all ingredients and let sit at least 20 minutes.
