Salad
- 1⁄3 cup orzo pasta, uncooked
- 2 cups cherry tomatoes, cut in half
- 3 cups spinach, finely chopped
- 2 teaspoons olive oil
- 1⁄2 cup olive, cut in quarters
- 1⁄2 cup mozzarella cheese

Dressing
- 1 tablespoon olive oil
- 2 tablespoons balsamic vinegar
- salt
- pepper
directions
- 1. Prepare orzo to package directions, let cool.
- 2. Warm oil in frying pan, saute tomatoes and spinach until spinach is slightly wilted. Add salt and allow to cool.
- 3. Whisk olive oil, balsamic vinegar, salt and pepper.
- 4. Combine all ingredients and let sit at least 20 minutes.
