ingredients
- 3 cups tri-color spiral pasta, cooked, drained and cooled
- 1 cup feta cheese, crumbled
- 1 cup grape tomatoes, halved
- 1 cup cucumber, peeled and chopped
- 1⁄2 cup black olives, sliced
- 3⁄4 cup Italian dressing
- 1⁄4 cup roasted red pepper
directions
- Toss all ingredients in a large bowl.
- Cover and refrigerate at least 1 hour to blend flavors.

I modified this a little, and it was great. I used a 12oz. package of rotini pasta. I used a fresh yellow pepper for color variation (didn't have roasted pepper on hand). I used parmesan instead of feta since I don't like feta. I diced vine ripe tomatoes since I didn't have grape tomatoes on hand. Great salad... my family loved it.<br/><br/>I also took this to a potluck ladies dinner and it was eaten up completely (there were many options).
