ingredients
- 4 cups melon balls
- 1⁄4 pint blueberries
- 1 tablespoon mild honey
- 1⁄2 tablespoon lemon juice
- 1⁄2 inch piece fresh ginger, grated
- of fresh mint (to garnish) (optional)
directions
- Combine melon and blueberries in a nice bowl.
- Pour honey and lemon juice onto fruit.
- Grate ginger over top.
- Stir well.

This was so good. We really enjoyed it. It was cool and refreshing, light and tangy, sweet, and tart with a hint of spice from the candied ginger. The sauce was excellent and complimented the blueberries and watermelon perfectly. This was quick and easy to make. Made for Culinary Quest - Southern USA for the Suitcase Gourmets.

What a delightful and refreshing salad! I used crystallized ginger (chopped) and did not use the optional mint. The watermelon and blueberries are a great combo of course but the lemon/honey/ginger dressing is just terrific - make sure you eat this with a spoon so you can drink up every drop of juice!
