Melon With Ginger

"Refreshing, but with a slight kick. I made this up for a potluck based upon ingredients I had at home. Use a mild honey so as not to overwhelm the melon. If you like, add more or no blueberries. Feel free to add more sauce and change the ratio of ingredients to your taste."

  • Combine melon and blueberries in a nice bowl.
  • Pour honey and lemon juice onto fruit.
  • Grate ginger over top.
  • Stir well.

  1. This was so good. We really enjoyed it. It was cool and refreshing, light and tangy, sweet, and tart with a hint of spice from the candied ginger. The sauce was excellent and complimented the blueberries and watermelon perfectly. This was quick and easy to make. Made for Culinary Quest - Southern USA for the Suitcase Gourmets.
     
  2. What a delightful and refreshing salad! I used crystallized ginger (chopped) and did not use the optional mint. The watermelon and blueberries are a great combo of course but the lemon/honey/ginger dressing is just terrific - make sure you eat this with a spoon so you can drink up every drop of juice!
