  • 2 12 cups flour
  • 12 teaspoon cinnamon
  • 14 teaspoon salt
  • 34 cup butter
  • 23 cup sugar
  • 1 egg
  • 1 egg white
  • 1 teaspoon almond extract
  • 1 12 cups mincemeat
  • 13 cup blanched almond

directions

  • Preheat oven to 350.
  • Cream butter and sugar.
  • Blend in egg and almond extract.
  • Stir in dry.
  • Roll half of the dough on silpat to 8x10.
  • Spread mincemeat on top of it.
  • Roll 2nd half of dough between wax paper. Place on top of mincemeat.
  • Lightly beat egg white and brush on top.
  • Spread almonds over top.
  • Bake until golden.
  • Cool.
  • Cut diagonally to make nice diamonds.
  • Enjoy.
