Ingredients Nutrition

  • 12 head radicchio (cored)
  • 12 head romaine lettuce
  • 14 cup fresh cilantro (chopped)
  • 8 ounces grilled chicken breasts (cut in strips) or 8 ounces chicken tenders (cut in strips)
  • 1 navel orange (peeled & cut in bite-sized pieces)
  • 1 medium avocado (pitted and diced)
  • 1 jalapeno pepper (seeded & slivered)
  • salad dressing
  • 13 cup light mayonnaise
  • 1 tablespoon lime juice
  • 12-1 teaspoon ground cumin (to taste)
  • 14 teaspoon dried chipotle powder
  • 14 teaspoon pepper sauce
  • 14 teaspoon salt

Directions

  1. Slice or tear radicchio & romaine lettuce into bite-sized pieces.
  2. Soak radicchio in cold water 10 to 15 minutes; drain and pat dry.
  3. In large bowl, combine lettuce & remaining salad ingredients. In a small bowl, whisk dressing ingredients until smooth.
  4. Pour over salad & toss.
