Messy Tofu Sandwiches

"I haven't had a real Sloppy Joe in so long, I don't remember what they taste like, so I don't know if this would be considered a substitute... but they are super yummy! The wild rice adds a really nice chew to it, but if you don't have any ready, just omit and cut back on the tomato sauce (or simmer longer)"

  • In a large skillet coated with cooking spray, saute onion and green pepper over medium heat until soft.
  • Turn heat up to high, and add tofu, cook until slightly browned.
  • Add the remaining ingredients, bring to a boil, then simmer for 10 minutes.
  • Serve on toasted buns.

  1. We did indeed enjoy this recipe. I think it should be called "SLOPPY TOFU JOE'S " . When cooking the crumbled tofu cook on high as suggested and really dry it out before adding remaining ingredients - Watch it cause it will stick.<br/>I did add 2 heaping T. of spicy mustard and served it open faced on toasted bread- had no rolls.<br/>it was a great tofu version of sloppy joe's PS I use Bragg's liquid aminos in place of the soy. ( it a great tasting, & a more nutritious soy sub)
