- 1 onion, chopped
- 1 red pepper, chopped
- 1 teaspoon olive oil
- 1 garlic clove, minced
- 19 ounces kidney beans, undrained
- 1⁄4 teaspoon oregano
- 1⁄4 teaspoon chili powder
- 4 cups brown rice, cooked
directions
- Chop onion and red pepper.
- Saute in olive oil with garlic clove for 3min.
- Add in kidney beans, oregano and chili powder.
- Stir gently until hot and water is absorbed.
- Serve over brown rice.
