  • Pour Ro-Tel into slow cooker.
  • Place chicken breasts on top of tomatoes and chilies.
  • Sprinkle on seasonings.
  • Cook in slow cooker (on high or low) until meat is tender and falls apart (about 5 - 7 hours on high or 10-12 hour on low).

  1. Taking the comments of the previous reviewers into consideration I put the chicken under the sauce ingredients. Ro-Tel isn't available in Canada so I used a can of diced tomato's and 1/2 a can of Ortega chilies. We had a good amount of sauce but that was fine as we had it over the chicken and also the rice. Tasty and very simple. Made for PAC, Fall '07.
     
  2. i used half of a small whole chicken that i skinned - i agree that the tomatoes and other stuff should be mixed and put on top of the chicken - i did that and the little bit of chicken i had left was terrific cold the next day. we served it on a whole grain blend of rice from Royal Blend and it was wonderful.
     
  3. We liked the spicy taste of the tomato "broth" over rice and the surface of the chicken had a great spicy taste. The next time I make it I'm going to slice the chicken so that more of the flavour gets through the meat. Very easy to make, though, and it just cooked all day... house smelled great.
