  • 6 cups chicken stock, preferably homemade
  • 14 cup long-grain rice
  • salt and pepper
  • 1 cup diced fresh tomato
  • 12 cup minced onion, preferably white
  • 1 cup diced cooked chicken
  • 14 cup fresh lime juice (or to taste)
  • 12 cup chopped cilantro (or more to taste)
  • minced jalapeno (or other chiles, to taste and optional)

  • Put stock in medium saucepan. Bring to a boil over med-high heat. Add rice, some salt and pepper; lower heat so that it just bubbles. Cook, stirring occasionally, until the rice is tender, about 20 minutes.
  • Meanwhile, combine vegetables with chicken, lime juice, cilantro and chiles (if using). Put in the bottom of one large bowl or 4 small ones.
  • When the soup is ready, ladle it over the stuff in the bowls. Taste; adjust seasoning if necessary.

  1. I make this soup all the time. You add to taste; that is how you make soup. I use lots of fresh jalapenos to get a lovely warm flavour. The number of people saying the recipe is too vague, is absurd. The directions are very clear and if you need additional instructions on how to cook a pot of soup, get thee to a restaurant and leave the cooking to someone else. Yeesh Soup: cut vegetables, dice meat, simmer. What more do you need?
     
  2. I just made this and it is fantastic. I tweeked it by adding a little touch of garlic powder and some cumin. Easy and delicious.

  4. Soup is one of my favorite things to make. This was simple to make and it was just so good. The lime does add such a wonderful flavor to this soup. I will definitely be making this again. It's one of my favorites on the ZWT8. Thanks for sharing.
     
  5. First of all it’s a simple Recipe that tastes awesome! I’m not sure why everybody saying it’s vague or there’s not enough directions it’s very concise! Boil the rice in the water with salt and pepper until it’s tender. Add the vegetables (tomato onions cilantro and jalapeños) With the cooked chicken into a bowl. I’m using leftover rotisserie chicken. Then Spoon the broth and rice on top of it! The vegetables are not cooked! I was looking for a simple tasty recipe and you delivered with this recipe! Thank you! I look forward to cooking some of your other stuff! But this is a keeper because it’s quick and easy and I always have leftover rotisserie chicken or baked chicken!
